Sometimes I Bake Stuff

Every now and then I feel super ambitious and want to try and bake something amazing. My cooking skills in general are pretty average (like right now I’m suppose to be thinking of something for dinner but I’m blogging instead …), but I like to think that I’m a slightly better baker. I’m no Wonder Woman when it comes to the oven, but I could probably pull off most things as long as the recipe wasn’t too crazy and complicated.

A couple weeks ago I decided that I wanted to make a pie. A rhubarb-strawberry pie, to be exact, but Kyle’s not a huge fan of the flavour so I decided to go with a good ol’ apple pie. Who doesn’t like apple pie? We happen to have an idiot-proof recipe book called “Clueless in the Kitchen,” from which I’ve also made the most amazing chocolate cake, so I figured I’d give the pie and crust recipe a try!

So, the recipe for the crust is:

  • 2 cups flour
  • 1 tsp sugar
  • 2/3 cup vegetable shortening
  • 1 egg
  • 1 tsp vinegar
  • cold water

Mix the flour and sugar together in a bowl. Cut the shortening into chunks and add it to the bowl and with a pastry blender (or a pair of forks or knives), blend the mixture until it looks crumbly and similar to oatmeal or bread crumbs. Crack the egg into a measuring cup and add the vinegar. Whisk it all together, and then add cold water. (I used enough to make the mixture measure out to a ½ cup.) Pour the liquid into the bowl of shortening and flour, and mix until it’s just all combined. Separate the dough into two halves and refrigerate  for at least an hour before using. It makes enough for a 9″ pie plate!

Now for the good part – the filling!

Recipe:

  • 4 cups apples, peeled, cored and thinly sliced (I used 6 medium-sized Gala apples):

Peeled apples! This took me FOREVER because I don’t have one of those fancy peeler/corer/slicer things.

  • 2 tbsp plain dry bread crumbs (I have no idea why, but Kyle thinks it has something to do with soaking up some of the excess liquid from the fruit)
  • ½ to 1 cup sugar (I used about ¾ cup of sugar because the Gala is a sweeter apple. If you use a more tart apple like a Granny Smith, use the full 1 cup)
  • ¼ cup flour
  • ½ tsp cinnamon

Preheat your oven to 425°F.

Roll out one half of the dough on a well-floured surface into a circle about 1″ larger than your pie pan. Gently fold it in half, then half again, and place it in the bottom of your pan. Take a knife and trim any excess dough so everything is even with the pan. Sprinkle the bread crumbs over the bottom of the base.

Now – add the sugar, flour and cinnamon to the apple mixture. Mix it all together until everything is well blended, and then dump it all into the pie pan with a “mound” in the middle.

Roll out the remaining half of the pie crust the same size as the bottom and repeat: Gently fold into quarters and place it on top of the filling. Trim any excess dough from the sides so the dough meets the edge of the pan, then pinch the bottom and top crusts together. Now, poke a few holes into the top crust, and you’ll have something that looks like this:

Put it in the oven for 45-50 minutes until the fruit is tender and bubbling. I went with 45 minutes because my oven runs hot. And then?

A little brown, but all done!

Delicious pie! Mine turned out a wee bit dark on top, but overall, it was really good! Kyle gives it 4 out of 5 stars. He’s my toughest critic, so I’ll take that as a big win! He figures the crust could use a ½ tsp of salt, but he thought it was really good for my first crack at homemade, from scratch, pie.  Go me!

And Then I Ate My Words

Once upon a time, I said that I’d never buy an e-reader, that I love the smell and feel of real books and nothing was more satisfying that flipping though the pages of a novel.

Well, on Sunday, after a couple days of hard deliberation, I went out and bought myself one of these:

A Kobo Touch eReader!

Man, those words taste funny…

I originally had thought about getting one after playing with my Grandpa’s Kindle Fire. I thought to myself, “Self, you read a lot of books. You’d probably save a lot of money if you bought the eBook version.” I also figured that once the baby gets here, it will be a lot easier to read a book with one hand if I only had to flick my finger to turn a page. I’d be mad if I dropped an actual book and lost my page while nursing.

I mentioned the idea of an eReader to Kyle, and he did a little bit of research on the different readers for me. There’s a lot of options!

I had originally thought of getting the Kobo Vox, which is very similar to the Kindle Fire. It has a colour screen, downloadable apps, web access and more. Actually, the Vox, Fire and the Barnes & Noble Nook were all pretty equally ranked, with the Fire coming in slightly ahead of the rest. I was leaning towards the Vox based on the in-town availability (I would’ve had to order the Fire or Nook online). I also had a $100 gift card to a big-box electronic store, so that would cut back on the cost of things.

Then I thought about the Kobo Touch. It doesn’t have the pretty colour screen or apps, but it does have Wi-Fi capabilities. I didn’t think I needed yet another wireless device. I already have a laptop and a smartphone, so why get an eReader with a bunch of bells and whistles when I just want to read books? I was certain that I was going to go with the “bare-bones” Touch but THEN Kyle did this:

Thanks, dear! This did not help and only made my brain hurt more. An iPad2 would be pretty amazing. I could pick whichever reader I wanted (iBook, Kobo, Kindle or the Nook) and I’d get full access to all the apps available through Apple (The Kobo only offers a “portion” of the Android apps). But they’re a little pricier than what we wanted to spend and the “yet another wireless device” dilemma came back.

After another night of contemplation, I decided I’d go to said big-box electronic store and try to make up my mind while I was there. The iPad2 was plenty alluring, with it’s pretty screen and über trendiness, but dang – it was just too much for what it was. I think if I were to own an Apple product, it would be an iPhone or a Macbook before a tablet. And – my brother had mentioned that the iPad has horrible visibility in sunlight. Not ideal since I like reading outside. (If it ever gets nice again!)

So, after looking at the Kobo Touch and getting a feel for it, I decided to go for it. It was in my budget and it’s going to do what I want without all the bells and whistles, which is fine by me.

So far, I’m pleased with it. It has Wi-Fi capabilities so I can download new books wherever there’s wireless internet access, plus I can plug it right into my computer and sync it that way. The screen is pretty awesome and it’s easy to read. I’ve downloaded a couple of the free books available from Kobo, and I’m trying to decide what my first actual purchase should be. (I’m leaning towards 50 Shades of Grey – thoughts?)

Perhaps I’ll do a full device review once I finish my fist book. Until then, I’m pretty excited for my new toy :) I’m considering it a “Congratulations on Carrying a Child to Term” gift to myself, lol

39 Weeks and Waiting

I’m now on maternity leave and just waiting around for something to happen.

It’s painful. I keep thinking that I “feel” something happening, that the baby could be coming, but then it stops and I wonder if it’s all in my head. Every cramp, twinge and bathroom trip leaves me suspicious. I am my own worst enemy.

I’m so ready for this all to be over. I’m not mentally prepared for the whole labour and delivery part, but I’ll cross that bridge when I get there. I’m waiting for that “burst” of energy that every past-pregnant woman has spoken of that happens before they went into labour, but so far, I’ve got nothing.

I’ve started trying the “get labour started” tricks – drinking raspberry tea, “bouncing” on an exercise ball, eating spicy food, etc., but so far (as of 5:30 Sunday evening), nothing. I told Kyle that he’s to take me down a bumpy back road while he’s on days off this week. I’m going to get this baby out one way or another.

Waiting, waiting, waiting … It’s the pits.

How far along? 39 weeks

How big is baby?  She weighs about 7.5lbs and is about 20.5″ long, according to BabyCentre.ca. I’m okay with that!

Total weight gain/loss: I’ve gained a couple more pounds, which I’m certain is all water weight judging by the size on my enormous feet and ankles.

Maternity Clothes? I’m definitely done shopping. Don’t be surprised if I wear clothes at all from now until the baby arrives. I’m not even joking.

Stretch marks? They’re there. Oh well. I’ll just deal with them later.

Sleep: I’m up all the time. I’ve been able to manage the “waking up sweating to death” bit, but getting more than 2 hours of sleep at a time is proving to be a challenge. The worst thing is that almost everytime I wake up, I wake Kyle up, which makes me feel horrible especially when he has to go to work in the morning. I really should just sleep in our spare bedroom, even though I’d have to deal with a potentially smelly Campbell.

Movement: Still lots, which makes me wonder whether or not Baby is ready to arrive. They (whoever “they” are) say the movement slows down when they’re “in position”, but my doctor said she’s head down. I don’t know. I’m completely lost.

Food cravings: Salt! Which is horrible because my feet are so swollen. And I’ve really been wanting fish & chips. Weird.

What I miss: Normal-sized feet.

What I am looking forward to: Baby arriving any day now, and a new chapter of our lives!

Milestones: The baby furniture is all in the room and ready to go! I feel SOOO much better now that it’s all there. Maybe that’s why I’m growing impatient.
