TGIF v.26

The high of my week was going out and finding our Christmas tree! This year we wanted to go out and cut one down in “the woods” after being super disappointed in our store-bought cultured trees the past couple of years. Kyle’s mom, aunt, and uncle joined us and we had a fun day hunting for our trees, complete with campfire-roasted hot dogs, hot chocolate and marshmallows! We found our tree and I couldn’t be happier with it! My house is now officially ready for Christmas.

The low of my week was catching a cold. Boo! Kyle had caught it last weekend and was kind enough to share it with me. I’m hoping it will go away before Christmas, so I’ve been pounding back the vitamins and echinacea!

An internet find I loved was this recipe for homemade Shake & Bake from South Your Mouth. Kyle has a sensitivity to corn and its byproducts and the store-bought stuff is loaded with corn starch, making quick and easy dinners a bit tricky. I turned to Pinterest for a homemade recipe and this one is awesome! Tastes even better than the real deal too.

The best money I spent was not necessary an inexpensive shopping trip, but I did a HUGE shop at Costco and now my giant freezer is looking a little less bare. I’m hoping I don’t have to make another huge shop like that in a while!

My favourite Isla and/or Norah moment was getting their letters from Santa in the mail! Isla has discovered the joys of snail mail and I usually just give her the junk mail and she’s happy enough, but to have an actual envelope addressed to her? She was elated! Kyle read her letter to her before bed and she just can’t stop talking about it.

The song that has been stuck in my head is “Can’t Feel My Face” by The Weeknd. I blame the Victoria Secret Fashion Show, but the song has grown on me and now it’s stuck in my head. Also stuck: “Downtown” by Macklemore & Ryan Lewis. Oh, and a variety of theme songs from the Disney Channel, including Doc McStuffins and Mickey Mouse Clubhouse.

My meals of the week were:

Monday: Fried chicken
Tuesday: Meatballs
Wednesday: Beef stroganoff
Thursday: Chicken fajitas
Friday (tonight): Pork chops

My plans for the weekend are hosting Kyle’s dad tomorrow for an early Christmas dinner. Other than that, no special plans! We’ll most likely do some grocery shopping for Christmas dinner and just relax and countdown until Kyle’s off on holidays!

What are you plans this weekend? Do you have a homemade recipe for popular store-bought stuff?

  1. Your tree looks amazing! We used to cut our own tree when I lived in NB but since moving to Edmonton I’ve had an artificial tree. We live in a condo so we’re not allowed to have a real tree :( I light Christmassy candles but it’s just not the same!

  2. Ooh, I have pinned the Shake n Bake recipe you shared! I love Shake n Bake, but I think a homemade seasoning would probably taste even better!

I can’t believe it’s already Christmas week! Crazy!
